Luigi's Pasta House Comes to Eagle, CO

Luigi’s Pastahouse to Open on Friday, May 7, 2010

April 6, 2010 - Eagle, CO -  Luigi’s Pastahouse (brought to you by the folks at the Dusty Boot) Opens in Eagle, Colorado on Friday, May 7, 2010 across the Street from Capitol Theater. Luigi’s will open with a whole new look for dinner only, 7 days per week with kitchen hours of 4p-10p, bar may be open until 11pm or until the last customer leaves, whichever is earlier. Patrons will enjoy moderately priced classic
Italian cuisine with family-style service.

Upon opening, Luigi’s will introduce an age-old dining concept to Eagle, the “Community Table”. This long table will serve family-style portions to larger parties, or simply bring the community together by seating smaller groups wishing to “mingle” while they dine.
In addition to in-house dining, Luigi’s will be offering select items off their menu for Take-Out. Area families will enjoy the convenience of calling ahead, then stopping by to pick dinner up on the way home. Larger orders will be available as well, with a minimum of 24 hours notice.

Located just across the street from the Capitol Theater, Luigi’s will offer the perfect “dinner & a movie” date for couples and families alike.
Luigi’s is a part of a family of restaurants owned by John Shipp, much like the Dusty Boot Steakhouses. As an added benefit to our Dusty Boot and future Luigi’s patrons, our “Boot Card” (the customer loyalty program in place for the Dusty Boot restaurants) will be valid also at Luigi’s. Currently, our Dusty Boot Card Members earn points by having their server swipe their card every time they dine. After $100 is spent (or 100 points are earned), the customer then enjoys $10 credit for future visits. The same will apply for Luigi’s and be transferrable between restaurants. Boot Points (as they are now called) will be earned on and valid for take-out orders, catered events and
banquet venues as well.

Owner John Shipp and his family have been in the Italian restaurant business for over 17 years. Italian cuisine happens to be John’s favorite, so he is excited to share some of his favorite dishes with the Eagle community.  Dan Hoyle will be the acting chef for Luigi’s, as well as the Executive Chef to oversee the 2 Eagle County Dusty Boot Steakhouses. Dan has been with John Shipp for 12 years, primarily in the Summit County area where he opened the Keystone Luigi’s back in December 2009. Dan will open the restaurant with staff from the Summit
County Luigi’s initially, while hiring and training new staff members.
